Synopsis
Cases of gluten intolerance are skyrocketing, and coeliac disease is four times more common than in the 1950s. This ambitious investigation reveals the damage caused by the deregulation of our economy on wheat, our staple food. The illustrations and their animation support the argument and help to understand sometimes complex mechanisms.
